“Safety Advice for the Real World”
It is a legal requirement for all food handlers to be appropriately trained depending on their duties and responsibilities so we offer a range of courses to suit this requirement.
Having appropriately trained food handlers also promotes customer confidence and helps to reduce the risk of complaints arising.
All our training courses and tutors are accredited by the Chartered Institute of Environmental Health (CIEH). This means the qualifications obtained by candidates are nationally recognised throughout the UK.
Many CIEH food safety qualifications are “sector specific”. This means that there are separate courses available for catering, retail and manufacturing sectors of the food industry. This enables staff to receive training tailored to the specific type of food business they are employed in, making it more relevant to their needs.

This half day course covers the essential elements of food safety including food safety hazards, food contamination, personal hygiene and cleaning.
It is intended for those staff handling low risk or wrapped foods or working as waiting or checkout staff.
The course runs for three hours and ends with a 15 question multiple choice assessment.
Formerly known as the “Basic” or “Foundation” level, this full day course covers the key elements of food safety including food safety hazards, food contamination, temperature control, personal hygiene, food storage, cleaning and legislation.
It is intended for those staff working where food is prepared, cooked or handled so is generally regarded as the level of training required by most food handling staff working in a catering business.
The course runs for a full day and ends with a 30 question multiple choice assessment.
The Chartered Institute of Environmental Health recommend that Level 2 Food Safety Awards are refreshed every three years to ensure the continued updating of food handlers knowledge.
This half day training course meets this requirement and is concluded with a 30 question multiple choice assessment.
Formerly known as the “Intermediate” level, this course enables supervisors to understand the principles of applying and monitoring food safety standards in a business. Key elements covered include implementing food safety procedures, applying & monitoring good hygiene practices, staff training, temperature control, contamination control, cleaning and legislation.
It is intended for managers and supervisors in medium to large scale businesses who have some responsibility for supervising staff or setting or monitoring hygiene standards.
The course runs for three days and ends with a 60 question multiple choice assessment.
It is recommended (though not essential) that potential candidates possess an appropriate Level 2 Food Safety Award before undertaking this course.
Legislation requires food businesses to have a documented food safety management system in place, based on HACCP principles and this course is designed to help caterers comply with this requirement.
This course provides business owners, managers and senior supervisors of small or large catering operations with a thorough understanding of how HACCP based procedures can be applied in catering businesses.
The course is run over a full day with the candidates then being required to submit an assignment for assessment. As a guide, the CIEH specify a total of 20 hours learning time is required for this course.
Formerly known as the “Advanced” level, this course is designed for senior supervisors, head chefs, managers and business owners to obtain detailed knowledge of food safety principles.
Key elements covered include bacteriology, food borne illness, food storage, temperature control, preservation, design & construction, pest control, cleaning & disinfection, staff training and legislation.
The course runs for five days. Assessment is by way of a written assignment (which is completed under examination conditions in a maximum time of 2 hours) and a 2½ hour written assessment.
It is recommended that potential Candidates possess an appropriate Level 3 Food Safety Award or significant food safety related knowledge and experience.

As food safety regulations and best practice are constantly changing, food business supervisors must keep their knowledge up to date in order to guarantee safe food for consumers . This course refreshes candidates knowledge of food safety and reminds them of their supervisory responsibilities.
The course can be taken as a one day attendance ending with a multiple choice assessment or by remote completion of an activity based workbook followed by attendance for an end of course assessment.
